The best you can do is provide a projection and then readjust when you're prepared. Yes, it is a bit silly that they are behind on the official site, but gaming media likely has its own quid pro quo deal going on with game companies to assist in cross promotions.

We're all mature people (maybe), we're not going to cry if the demo isn't released on January. It is true that "things happen" but, usually, when you give an estimate you try to cover your bases and give one you can be fairly confident about (because not delivering on that estimate is bad PR). Notice they never gave a specific date, just a month: January. That gives you some flexibility.
And what exactly is it that has happened that has delayed the release of the demo, or even a concrete date for it? Leaks? They're bound to happen as you approach the release date and you cannot hope to revise your entire game three months before launch. Something else maybe? Perhaps, but without actually knowing anything we can only speculate. "Things happen" is speculation, we believe something happened that delayed the release of the demo or any information regarding it, but it doesn't have to be necessarily so.
As for the "they shouldn't have made up a date" argument, well, they didn't really. They announced on November it'd be sometime on January but that's about it. Considering the game is being released (maybe) on March 6th, a mid-February demo release is kind of pushing it.
