Then find some nice quiet and remote place to retire to for a couple of years.
Then build a ship and head for another galaxy to explore and settle with those who want to follow.  Liara, Tali, the old team + civilians and specialized personel.

At the same time, Miranda will head a rebuilt Cerberus, and Shepard will assist her when he is called on.

After he's finished with his vacation time, he'll likely go work with Garrus, cleaning up merc hideouts.

Go back to Rannoch, pick up Legion, and then the crew consisting of Legion, Tali, Garrus, Vega, Joker, EDI, Gabby n' Ken, Conrad Verner, Zaeed, Chakwas, Mordin, Liara and Kaidan all take the Normandy SR-2A to Alchera, where they salvage and repair the Mako.

Then they travel the galaxy, cleaning up Merc gangs, exploring new worlds, and subsequently crashing the Mako on said worlds repeatedly.

He'll do the talk show rounds for a while, and after the money dries up he'll write a tell-all book which will quickly be discredited due to plagiarism. He'll go out of the public's eye for a while, but then 30 years later when one surviving reaper attacks a colony, he's called on for one last mission. He packs his catheters, prunes, and trusty mattock and accidentally boards a ship bound for a different colony due to poor eye-sight and kills some poor quarians that he thinks are geth. Spends the rest of his years in a mental hospital.
