I've got to agree that a main problem for the new series are the environments. Though I can't tell if it's more of a problem than the petty colors, and for me, the music.
Like when the guitar kicks in at the end. That's cheesy to no end.
Also, I'm personally not a fan of the choirs' "ee-eh!" thing.
It does follow a large part of the manga, but if I'm allowed to say this, the 2011 one takes from the start of it more than it follows chapters 71 onward (aesthetically). 1999's September arc really resonated with that anime, and was, in my opinion, the artistic get-go for it.

Is cowboy bebop one of those Japanese things that tries to appeal to Westerners? I think we already get enough of that from Crapcom.
