Either read the VN and watch Zero and UBW or just watch UBW and Zero.
I learned my lesson, I learned to listen to you after SAO and how I should have stopped at episode 14.
I don't think my laptop can handle a VN, it gets hot enough watching stuff.
So then, watch Zero first and then UBW ?
Or are you wanting me to watch UBW and then Zero?

EH this is my personal opinion. Zero is and Stay Night is like the two Star Wars trilogies in a way. Stay Night was released first, Zero came after and explains alot of things that built up Stay night, however because of this Zero does spoil ALOT of things in Stay Night. Think of watching ep1,2 and 3 before ep 4,5 and 6. You would already know who Dark Vader is and that big reveal in ep5.
Now of course Zero is already finished while UIBW is still on-going and HF movies will take awhile so maybe watch Zero, just warning that alot of the surprises in UBW and HF won't have the impact it has if you don't watch Zero. so it's up to you.

Wasn't Fate/Stay made by a different company than who made Fate/Zero and UBW?
So, UBW is the current company's version of Fate/Stay?
Sorry for bombarding you with all these questions, I'd look it up myself, but I'm afraid I'll run into spoilers. 
I'm taking a full on ignorance approach with this, I find that works the best for avoiding spoilers.

Nasuverse takes place in a multiverse, There are unlimited parallel worlds. All the routes happen, same with all the endings, bad endings and dead endings. Zero on the other hand was a linear story so there are no diverges.
What you are watching in UBW is one parallel world(which will probably bet he True end route) of UBW.

Hassan-i-Sabbah is not a person. It was a title given to 19 leaders of the Hashshashin. The Hassan-i-Sabbah in Zero is called The Hundrfed Face Haasan, one of the 19 leaders.
Also SN Assassin is Kojirou Sasaki, who like Bluebeard from Zero, is in the wrong container(he is fit for Saber class and thus lacks many of the assassin abilities but because he is a strong swordmaster he can fight in physical combat which an assassin can not do)

Duality is one of my favorite themes ever and I'd say you touched upon a few of the main reasons why this series is so good with that theme quite nicely.Actually here is just some rambling about that I just came up with getting a burger, about how matched up everything feels, Sayaka and Kyoko, Homura and Madoka, etc.
