So i'm about 2 movies and 10 episodes into LOTGH. Pretty solid so far so complaints really apart from the obvious age ones. I feel there are way too many character though i'm having trouble keeping track of them all. There are 100 more episodes left to develop them in though so hopefully they won't all get like an hour of screen time each.

My trick is not to look at the names when they pop up the bottom.
They distract you and make you remember some worthless sh*t.
Better just learn the names as you go along and stuff like a normal show.
But yeah.
The main cast are fleshed out and developed.
Of course, this mainly goes to Reinhard and Wenli
But also to Reuenthal, Mittermeyer (the ones they call Twin stars, blonde dude and black hair dude who're always together) Walter Von Schenkopp (Rosenritter leader and always tells Yang to cease power) Julian and a few others too.
If they're not developed at the very least they are characterised, which is fine for such a huge cast.

I'm currently watching Lotgh but, I need a break. I know it sounds silly but it's starting to take a toll( seeing people dismembered etc ). So I was thinking of starting something else( temporarily ) I just want something that's quick, easy to follow and short like maybe 10-15 episodes any recommendations?

Thats actually not a bad idea. Just take a break between 26 episodes each time 
While doing some occasional writing on Steins Gate I chose to seek out an intriguing anime that caught my eye, originally based on a novel, called Welcome to the N.H.K. It was summarized as a black comedy drama with a psychological edge, which sounded up my alley and my impressions so far are sound.
