It makes no sense. Ufotable also cut one of the most coldest lines Saber says in ep12 so she can be shown as the victim, not the agitator. The Saber in Ufotables UBW is not UBW Saber imo, she is pretty much a carbon copy of how she was in Zero.

I'm actually quite surprised how rather different Shirou is as a character in some aspects. Certain character traits are completely absent in UBW (or they are just not shown).
Not that I mind, since most of the traits I dislike about him that are more prominent in Fate are not present in UBW.

As far as Vampire Princess Miyu is concerned, I assume you also watched the OVAs from the 80s? Because if you haven't, then that'd be the first recommendation.
Other than that, it really depends on what you enjoyed about Miyu. A relatively safe bet would be to recommend Mushishi, since I think it shares quite a few aspects of Vampire Princess Miyu. Not quite as twisted and depressing though. The ratio of characters that appear in only one episode and that don't die and don't get their lives ruined forever is much higher in Mushishi.

Nah, House is mostly talking about her abilities and not her character, since she was able to handle Berserk a lot better than in the VN. Not that I mind the change myself, since Saber used Excalibur against Berserk, and Illya got interested in Archer due to his destruction power was a lot greater than Sabers. She is the same. Ufotable made small changes in the story which are subtle references to Zero (which were not present in UBW novel).
I am expecting they will do the same for second season in some capacity. Or at least, they should.
