In these sorts of very episodic shows (Mushishi, Kino's Journey, Vampire Princess Miyu ...) the protagonist is mostly used as a mechanic to bind the various stories together and to serve as a proxy for the audience. The focus isn't so much on the main character, favoring instead the various mini stories that happen during their travels and the other people affected by them. This is even truer when it comes to Kino's Journey, where the main character is often only a witness and rarely interferes.

By eschewing development for the main character, the stories contained in each episode are able to take the forefront of the show and the messages and reflections they contain can have a more direct impact on the viewer without being distorted by the needs of an overarching narrative bound to a group of recurring characters. At least that's how I feel.

Hopefully I made that comprehensible. English isn't my first language. Simple version : these kind of shows aren't really about the main character.
