If I might make a suggestion as well, check out Rurouni Kenshin. If you're familiar with the Meiji Era, this would be right up your alley (it's sort of an alternate universe take on how things might've progressed if some of the more notorious swordsmen of the time were still kicking post-revolution)
Yeah, I have it on my list. Definitely like the concept, and will tackle it once I've chopped down a few anime that are currently on my schedule.
I.... honestly have no idea how it would be described. Other then just the zany antics of Space Dandy, who is a dandy guy... in space. He combs the galaxy like his pompadour, on the hunt for rare aliens.
But in all seriousness it's from the same guy who brought us Cowboy Bebop and similar shows. It does have a plot, but it's mainly an episodic venture that is hilarious. It has really strong characters and leads up to a killer finale (which I'm still not over, because the man I would follow DIED).
It's a good sci-fi show that I urge people to watch if they haven't. In its own way it's surprisingly deep.

Dr. Gel is the best, because he has such style (his ship is amazing as well).
And his right-hand man is a giant cucumber as well, which is even more reason to watch the show

Brotherhood is definitely something special. it was the first/second anime show I watched after really getting into anime shows, and I'm really glad that I did so.

Well it goes without saying that Brotherhood is the superior one, though I give credit to the original for having a stronger first cour (events up to Hughes incident) and some members of the Homunculi I preferred over Brotherhood.
Bradley, Envy and Greed I found were the characters that were better realized in Brotherhood, though the rest of the cast I give FMA credit for (except Gluttony, which was pretty much the same in both versions).
Otherwise I don't think there is really an argument to be done about which one is a better show, since Brotherhood handled its thematic values, overall characteristics and plot points better than FMA.

Though I'll add if you were to ever watch Brotherhood again you'll feel that the first parts aren't as rushed. But I understand that coming from FMA it would feel that way.

I'm sure you'll enjoy FMA for its first half (up to ep 26 or something) though after that... not so much when compared to Brotherhood.
And for me--I think I'll start with Death Parade or watch a couple of episodes of HunterxHunter, since I'm kinda in a "shonen" mood. Finishing DP sounds like the more ideal choice, but I doubt I will bing watch HxH in its entirety, so I wouldn't be surprised if I'll end up watching a shorter anime on the side (unless HxH manages to completely "suck me in").
