Shirou lasted longer in his fight then in the anime.

Doesn't seem that much longer.

 

Shirou only uses Kanshou and Bakuya once or twice in the VN and then he starts telling how he can't project them perfectly with his skills and then they break apart.

I disagree. Shirous monologue in UBW and HF  and the monologue in the interludes improved the scenes and made them  far more enjoyable. The monologue in Zero also made the anime more enjoyable.

Well guess it is just me then, since I found that they talk a lot, which sounds impressive but generally is circumventing around the same principal of philosophy/ideology that they are talking about.

Most convos with Shirou/Archer I found were better in the anime since they cut out many unnecessary talk (Fate route did the same thing, but at least UBW and HF delivered on what they talked about later in the story and didn't become incoherent).
