How are oyu feeling about Illya since she has  alot more events in HF, along with more stuff about Kiri Chewin?

Well nothing substantial that I can say really as of yet.

The stuff about Kiri is, well nice, but are stuff that I already discerned from Zero so hardly anything new (of course this is due to me having experienced Zero first), and Shirou hasn't really put much thought on his views on Kiri after the revelation (meaning none), and has simply been stuck in a limbo for now.

The scenes with Illya have mostly been cute, but I am simply waiting what the "end goal" is and whether these events serve as building blocks for her relationship with Shirou, so I am waiting to see how that will develop and whenever Kiri will become a topic between these two.

I expect these factors to be addressed sooner or later in the story, hence why I am keeping more 'comprehensive' thoughts until later.

I saw the Unlimited Blade Works epilogue today. I really liked the part when Rin went with Emiya to visit Saber's blade, touched a stone, and ended up getting transported to 18th century Scotland for another adventure.

So did this mean that Shirou led a life with Rin, but ultimately before his death became a Counter Guardian, but simply not the same Archer as in F/SN?

The difference is how far SHirou will go.

Thanks to Rins, her support and love and his lessons learned, he will surpass Archer(which that desert scene after Archers answer was meant to show but Ufotable messed up) UBW Shirou will end up like Archer, but he won't have any regrets and will become stronger then him. Plus he has Rin before he dies. 

UBW true end is still the best possible ending for Shirou, with UBW Good being the worst for him.
