Only things that irk me off are dubs and omitted opening/ending songs.
So I think I really care about music and voice-acting. An audio-oriented person as I oft likes anime, because of the quality and meaning of what's to hear.
Ok, every now and then I'm bothered by total abandonment of style, as seen with anything that followed the original 1999 Hunter x Hunter. 2011 isn't as bad, because it tries a new thing aimed towards a new audience, yet the Greed Island arc closely following the original was a disaster, twas utter bollocks.
As to preference of style in itself, I most love the original movie of Ghost in the Shell, and then some artsy stuff, like the abovelinked Sayonara Zetsubou Sensei. Or Katanagatari. Katanagatari has some really cool art.
Interesting that you, sim, brought up Eden of the East and FMA. Neither did catch my eye, though EotE is more pleasing, in my opinion. Simple lines and a realistic tone. Yet it's more in the pacing of the anime itself, and less in the art which I enjoyed. And FMA got the same reaction, though there's much going on in every way (I loved seeing the show), it overall feels like an ordinary early 2000's anime in its visuals.
So overall I just like what's conveyed in anime, and how. There's much of introverted stuff that's thought-provoking, intellectual or emotional yet decorous. I love the idea of animated visuals going anywhere they want with much room for the imagination of creators, flowing in with a perfectly fit soundtrack/voice-acting. It's a whole new world, crafted by the author's/director's view on things in general.
