Am bored again and didn't find any new interesting anime that align with my preferences, so I'm looking at rewatching (again) a series.
The problem is, I'm looking at GitS:SAC, Black Lagoon, Psycho-Pass, Ergo Proxy, Jormungand, Seirei no Moribito and Hataraku Maou-sama ... and I have no idea which one to take. I'm literally swaying my opinion by the seconds and can't decide. Help please.

Ghost in the Shell SAC
The first season might annoy you with its Stand Alone episodes since they intefere with the pace of the main plot. But those final episodes are just... CHEWIN, HELP ME EXPLAIN HOW GREAT THEY ARE!
As for 2nd GiG. Yeah, it's better than the first season so far.
And not that the first season isn't bonerific. It's simply bonerific x2.
Everyone should watch Devil is a Part-Timer / Hataraku Maou-sama
Otherwise Gits or Black Lagoon would be my recommendations. Jormungand is so-so and really anything that it does well can be found done better in Black Lagoon

I have seen all those shows 
My question was about rewatching and how I couldn't decide which one to choose because they're all great.
As for Jormungand vs Black Lagoon, the one thing it does better is the gun porn. Black Lagoon has the action down to a science and it's narrative is much more mature (and less nonsensical when I think about Koko's master plan), but Jormungand simply triggers the hidden gun nut in me (pun intended). Also, Valmet and Lehm could stand right with every Black Lagoon character and not look out of place. In fact, Jormungand and Black Lagoon stage within the same universe (young Koko has a camoe in the Black Lagoon manga!)

I found it odd you wouldn't have watched GitS, that show seemed right up your alley.
My hunch was correct.
And yeah, Jormungand and BL are in the same universe, it's great. And makes sense too since they both deal with (kind of) similar things.
I like Jormungund for its dealing with war and crime. One scene that impressed me was Koko getting really p*ssed off at the Mafia for trying to buy her weapons with drugs. She shot them all down, but was professional in her reasoning. It really reminded me of those old gangster movies.
I also like every one of her plans that don't involve the controversy that is Jormungand.
Child Solider theme could have been explored more. But I liked it how it was.
I think it doesn't get enough credit, but it's still not Black Lagoon.
Anyway...
As for new shows... well f*ck. I don't know how much anime you've watched.

I've been laughing my ass off looking through this thread. This is the reason why I love this thread!
Watched first few episodes of Angel Beats. Well, to be frank I have been laughing my ass off watching it as well. It certainly is fun, though the plot is... well all over the place if that makes any sense. I get the feeling this anime is too short. Ah well, as long as it is fun, I won't mind.
