To clarify, anime is stylized, but even then portraying age isn't that difficult. Face is only a part of it - body proportions and clothes as well as behavior play a big part.
Hell, even shows like Lucky Star sometimes do a better job than these more serious shows.
Best course of action (IMHO) is to never mention age unless you have to.
This works even better if character look older than they canonically are (and more appropriate to the actual show). Example of this would be Saint Seiya or City Hunter. Characters look and act like they are all between 20-30 at least. But this also works because there is no high-school enviroment.
Then you have shows set in high schools with characters that just confound me. For example, girls that look, dress and act like they are 10. Girly dresses, frills, huge heads, more child-like proportions, very girly voices, shy, timid, etc.
In other words, they look even younger than they should be.
Maybe loli-lovers like it, but I find it unsettling. The characters feel fake. A 2D cut-out.
Not a problem in shows like Lucky Star, Azumanga Daioh or Nichijou. Those are very stylized parodies and they never try to be serious.
But can you honestly imagine characters like that in GitS or Ergo Proxy? The Major being a super-girly school-girl?

Makes sense. Though dunno about questions being raised about switching genders of their own historical figures. Stumbled upon some rather recent anime which features a guy from the modern period who time travels to the Tokugawa period, but every major historical figure (likes of Oda Nobunaga) are all women.
Apparently it is actually pretty good. Might watch it today if I find the time. It is only 12 episodes long.

I liked it, it was one of the first shows I actually watched so must've been back in april that I watched it.

Certainly and I don't disagree. The thing however with the art style that I'v seen is that they tend to vary from show to show, with certain animations having very minor differences in portraying age. Generally they fall in three categories; young, middle aged and old, with the former and latter being quite prominent in their features but with the middle there tends to be little to no variation, to the point that I could never guess their age group.
I am personally neither a fan of "loli" but I respect people who like it. I'm not certain if you are referring to F/SN suffering from the "highschool syndrome" or that they act more childishly than they should and one reason you have with it, but I do not see Saber as a loli or that the characters act childishly. If this wasn't what you meant, I apologize in advance.
And no I couldn't picture Motoko is such a situation, but that is due to the show knowing how to portay what it wants to tell. The only reason for such a feature to be included would be for fanservice. Naturally it is essential for a show to put forward early on what exactly the show is about and what it contains. If a show like GitS was suddenly to have an episode about highschool drama or whatnot, obviously that would be questionable. Or in this case, if Motoko was a girly school girl leading a tactical operation team, then it wouldn't be a feature I am a fan of. Wouldn't constitute as being outright bad, but not something I could take seriously.

Miamoto is to be praised. He wrote The Book of Five Rings after all, which was quite inspirational for me and an enjoyable read.
Come to think of it, I recall there is an anime called Samurai Girls which has a female character named Musashi Miyamoto. I think it is an ecchi, but don't quote me on that.

So I caught up with Gintama's manga...
THIS LAST ARC IS F*CKING AMAZING!
Every "serious" arc from Gintama is quite something. It's full of drama, characterisation, development and action. But jaysus H christ this one takes the cake. This one is the best I've seen since Benzikura and Yoshiwara. Hell, I'd say it's even BETTER than those two.
God I hope the anime continues. This stuff NEEDS to be seen animated.
The next chapter will be perhaps the most awesome fight you'll see in Gintama yet.
