I install the raven  mod to respec once, because I realized I didn't like what I was building.
Now, at level 7, when prompted to select a specialization, I have Champion, Templar and Berserker unlocked!
I want to unlock them normally. Will I miss out on all the dialog this implies? How about future plays? Can I reverse this somehow?

You can still go through the dialogue for Templar and Berserker. It's nothing fancy. Champion gets unlocked as a result of the main quest, so you'll see it no matter what you do.

All you can do I think is delete your saves and local game data. Thus start over completely. Don't quote me on it as I play on the PS3.

I'm not sure a fresh install would help. It might. But all your achievents are uploaded here -- and that makes me believe whatever you do has no impact on the unlockables.
But I could be wrong.
