Well, first, one must consider that we're apparently supposed to have destroyed the Collectors to the last, and since the Collectors were created from the Protheans, of whom there are now none left, well... Where would they get "material" for them? Besides, we're facing plenty of enemies without a need for a return of these old enemies...

Yes, but she specifically mentions multiple profiles:

"Shepard, I have compared the ship's EM signature to known Collector profiles. It is the vessel you encountered on Horizon."

So, off of limited contacts, they have assembled more than one profile.

We still only ever see one ship, and there's never any news of more than one colony being abducted at the same time, which the Collectors could feasibly do if they had several ships.
Alternatively, I think:
1) The Collectors had other ships previously. Samara mentions encountering one when she was a maiden mercenary, and that was likely hundreds of years ago. If that was a ship the Colletors used, then subsequently lost due to enemy action or equipment failure or whatnot, then it might explain the multiple ship profiles. If Cerberus dredged up those (by now) ancient profiles, then it might explain EDI's choice of words, even if the ship in question is no longer in use.
2) The Collectors deliberately gimmicked whatever piece of equipment gives off the EM radiation. We have no idea what 'EM' stands for in this context, but if its a piece of equipment, surely someone can retool it to produce different signatures. The Collectors might do this to create the illusion of having multiple ships by giving the same one different EM signatures when they go off on missions. The theory becomes shaky when one considers that the ship Shepard boarded was specifically there to lure him in, and it would have been dumb for the Collectors to set the EM signature to the same one that took the Normandy down years prior.

I thought the Collectors were pretty entertaining enemies to fight in ME2. Seems like kind of a waste not to use them at all in ME3.

The collectors are done and finished. We did them a favor by putting them out of their misery.

As far as I am aware, the Collectors were a disposable plot device that simply disappear. If they DO come back in ME3, what would their purpose be?

Something to shoot at. That's pretty much why all enemies exist obviously. That or to be talked at. But they don't have mouths so I don't think that works.
