How do you modify existing in game conversations?

Currently that's not possible, as core campaign materials are locked. They will be unlocked in the future, however, so hang tight.

This is good news.

The best way to learn is from examples and unlocking how the whole core campaign works is a great idea.

It will also simplify adding new races and origins, since seeing how the existing ones are done will help us integrate them into the core game.
