Soldier- Cartwright Curse till ME3 then see what is available to perhaps break the curse.

Infiltrator: Liara, forever faithful
Adept: nobody but very interested in Tali...might commit suicide if she doesn't get that romance
Sentinel: actually planning to get the rumored new crewmember
Vanguard: not sure, she tried Samara...might try Ashley this time
Soldier: Kelly, faithful
Engineer: Garrus, faithful
Sentinel bis: nobody and likely nobody in ME3 unless there is some one-night encounters
And the Dudesheps:
Vanguard: Jack, faithful
Soldier: Ashley in ME1, Miranda in ME2...might cheat the two with James ^^

The character I consider my 'canon' version of Shepard, was with Liara in Mass Effect 1 and Miranda in Mass Effect 2. In LotSB (completed after ME2) Liars and Shep picked up where they had left off.
