Between ME2 and ME3, BioWare decided that first, they were going to add a Prothean squadmate, and that second, it had to look like a badass. And if you read the leaked script, all Protheans were essentially badasses. The feeble frame of the Ilos statues/visions were no longer adequate to that mind set, so they started to work backward from the Collector's design.
You have a thematic shift in Prothean design. Before they were presented as a mysterious and enlightened race, now they're more or less a race of space samurai monks. Bulkier and more in theme with the Collector appearance.

They remind me of... Samurai for some reason. But that top of their head seems REALLY out of place there. Blue chin and then brown all the suden!?

That's because that's the exact effect they were going for. People have uploaded a scan of the artbook page with the various concepts, and that's what the explanatory text says.
Interestingly, they seem to have considered a sort of hybrid between the statues and Collectors at one point:

skip to the 6:03 mark because liara even stated that the protheans ARE NOT the first galactic race and her findings cant be proven

Um clearly it has more insectoid elements than asari, turians, humans, salarians, batarians, elcor, hanar etc.
Seeing as the designers made the Collectors to look insectoid, and this concept art looks like a Collector with a human-esque half of face pinned on you can hardly be derisive of the view that it looks insectoid

There's one that looks so much like a Tau it's uncanny, even the coloration on the armor.

The statues on Ilos doesn't have to be Protheans either, remember that.
I think the concept art pic looks a lot like the Protoss from Star Craft, only with more eyes.
