Someone asked about the aforementioned three items in the No Spoilers forum, and Sloth replied:

I haven't ran accross those, and it's not in any side quests that I can see. Anyone care to enlighten me? Should I be keeping ahold of these? If so, how many? I'm already collecting Toxin Extracts and Garnets and Deep Mushrooms, I'd like to know if I should have kept these.

I havent seen any use for these on any of my playthrough. So i doubt ther is any quests for it.

I'm also wondering about this - I'd think maybe the blank vellum can be used in the forge quest when you take down the names of the dwarves who became gollums, but I'm not 100% sure? I just always had it in my inventory so I don't know if the option is there regardless.

Someone once said that the trade manifest gives you a discount at shops but I'm really not sure, as for what the vellums and documents do they're purpose escapes me.

I think they're random junk to sell for coin and clutter up your inventory. Not unlike the gemstones. Every game has random junk in it not everything is quest related.

It's not just that it's junk, it's junk that doesn't sell very well. I think the trade manifests give you 30 ish silver? None of the others, excepting the higher quality gems which are not junk since they can be turned in for xp, sell for close to 30s. It's really not worth picking most of them up at all.

There where one quest where you collected the love letters, I guess you can find a quest for some of the other "junk" too.

When you are trying to scrap together a few more gold to buy that last epic item before you go to war, it all adds up. When I was going around picking pockets in the end to buy the Spellsward amulet, so as not to have any unused gold left in my pocket when I fought the Archdemon, and I was mostly finding trap and potion components in peoples' pockets, I was grateful for all the worthless scraps of paper I had collected and sold during the course of the game.

But the love letters are not items taking up precious inventory space.

Yeah, as pointed out by Uhl, the letters go in the Plot items sections while all this other stuff goes in "regular space".

Wondering about these items too. Perhaps they are left over from some quest(s) that was/were removed? Didn't find a use for them in my first run, keeping them at Warden's Keep just in case on this, my second run.

Captain obvious (with Colonel Off Topic bringing up the rear) here: things like traps and potions are worth more than the components. Might be worth buying the plans for some and making them. You don't just make it up, you profit in the long term.
