My Wynne is a Spirit Healer / Arcane Warrior with Wade's Leather Drakeskin
My Morrigan is a Shapeshifter (thinking Spirit Healer as second spec), with her Second Frost Robes and I have the Frost Staff from Warden's Keep.
I think both may be useful, but I need a Rogue, a Tank, & myself (DW Warrior / Off tank).
Normal Campain - Morrigan or Wynne as dedicated Healer with side damage

on normal difficulty im confident you can tank it as a Dual Wield warrior. just make liberal use of Taunt and you'll do fine. the damage he takes won't be a problem with 2 mages able to heal.
for your Rogue i'd suggest that Zevran does much better damage than Leliana whereas Leliana is better at lockpicking and whatnot. both are optional though. there's nothing essential locked in chests, but opening them gives you decent bonus exp and some supplies that you can sell for money (armor you won't wear) or use (consumables and stuff).
so the 2 mages for sure are a good choice. you can tank with your DW war if you want and take a rogue. or if you don't care about opening chests you can bring Alistair to tank and stay in the DPS role yourself. you won't miss anything important, just a bit of exp (maybe a few thousand over the whole game) and a bit of money.

Should I pop up Threaten or Momentum as a Tank? I shouldn't do both due to Rally taking upkeep too.
I may just skip the Rogue and go Alistair / Shale / Loghain as you said.

To be on topic with the header, I like Morrigan as my off-healer/crowd-controller but I rarely use her for pure damage. I have her attack the tanks target through tactics but only after healing tactics.
Mages make things too simple really, but it would be silly to not have someone with an extra heal to mitigate your healing potion consumption. And as a side-note, the extra XP you get for popping locks and traps gives you quite a boost through the game and also helps you from running into traps cause you can't see em without. I use Leliana (don't like Zev..freaky lil elf!) as she is, because the archery takes less in terms of rogue talents to be good(yeah I know someone will harp about archers being sucky), and she stays out of enemy AoE most of the time that way.
One more thing, all ya need is one warrior with taunt/threaten to deal with most mobs so go for extra damage should you pick up more melee to go with. Sword and board makes solid sense for a tank...not being able to get flanked is totally worth it.
