It's been a while since I've played this game and seeing my friend play has made me want to redownload it on steam and start it up. However the first time I played I never beat the game and it's not because I didn't like it, I just had many other things to play.
Main thing I want to ask is what is fun build to run? I suppose I don't mind being super OP and going AW but mainly I don't want to go rogue/archer.
It might be bad of me too, but I'm not much for experimenting myself and so if someone has a set "Pick this skill at this level" "Do this quest and equip this" build/guide, that would be much appreciated.

In terms of building a team, probably a good choice for a new player would be to have a balanced team: a rogue archer with lockpicking and trap disarming talents; a sword and shield tank, perhaps with the ability to use poisons; a mage, either healer or damager depending on preference; and a second melee fighter to assist the tank. Having several characters all with the same skill set is probably not a good way to build a team, though it can be done.
I would not be too quick to dismiss rogues. They can be built into dual-wield melee fighters that are quite powerful. Rogues also gain skill points more quickly than other characters -- getting one point every second level up.
But the game is yours to play as you like. These are just a few random suggestions.

The usual team of Tank, DPS, mage, rogue is a balanced and sensible one. However, when it comes to pure FUN builds...
- All Warrior. A party of four beefy warriors smashing their way through the game is surprisingly fun and perfectly viable. You'll want to be one yourself, and get Alistair, along with Dog (drop for Shale ASAP), and Sten/Oghren (whichever you prefer). Buff the Strength of Dog, Shale, Sten and Oghren pretty much exclusively. For Alistair, pump Dexterity and make him a dual sword warrior. And take Templar specs for Holy Smite which you'll be (desperately) wanting to deal with enemy mages.
- The Swarm. The rogue spec Ranger allows the rogue to summon an animal pet to fight alongside you. With yourself, Leliana and Zevran all as rangers, that's 3 pets - 7 fighters in all. Tasty. Build yourself, Lel and Zev as DW rogues (both with daggers, pump Dexterity and Cunning - heavy on the Dexterity). Then just swarm the baddies. The fourth companion can be anyone - maybe Morrigan Shapeshifted into an animal? Maybe Wynne with Haste to make sure you all attack super fast (would be my recommendation)?
Or if you want a regular team, I say the most fun build is Two-Handed Warrior. You'll be slow, but oh-so powerful. Eventually you'll be charging through enemies like a wrecking ball. Very satisfying. Especially as a Dwarf. Just charge in headlong pretending you have short-man syndrome.
