There are quite a few different exploits related to +con items and the more of those items you have (and/or spells that boost Con) the worse the problem gets. I've got a fix coming in 1.42 to help minimize a few more of the conditions but it's still going to damage you some if you have a lot of +Con items.
Trust me when I say the disease is much worse (especially exploitable on a PW) than the cure. PWs can easily have chars with +600 fake hit points and unlimited self-healing without the anti-exploit code. It was a massive pain to try and handle every combination and situation that the engine has and I probably sank over a hundred hours into coding/testing/debugging it. I'm open to further improvements but it is not something I plan to make optional.
Character sheet errors? (very long post, sorry!)

This wouldn't be so much a problem, but the +Con item I gave to Elanee is only +1, and it doesn't increase her Con modifier, yet equipping and unequipping it constantly reduces her health by 8 points each time (she's level 8 at the moment). That's surely not how Kaedrin intended to fix any sort of exploit?
Iirc Elanee's natural Con score is 13, so equipping a +1 Con item will increase her Con modifier - which is why you are reducing her by 8hp every time you unequip it.
Kaedrin's Con fix is aimed primarily at PW's and can, I believe, cause an issue in solo play if the player reloads frequently. Given that resting is very easy in the OC, however, it is hardly a serious issue.

Her natural Con score is 13, but I increased it to 14 on a level-up. The +1 Con item also provides a Will bonus, which is why I had it equipped. So you see, it is a little unfair for her health to be penalised.
I have no clue when it comes to scripting, but is it really easier to script a health penalty rather than try to find a way of fixing the spell itself?

No it's not something which has a simple solution, like most things involved in programming how things are implemented in the engine are a bit more complicated than you'd expect based on how they seem. What i am describing is the simplest explanation, but it affects all stats in various ways, and has quite a few wonky behaviors that makes it hard to predict what will happen all the time.
There is not a health penalty going on, there is an illegal health bonus. If you have an 8th level druid with 8 hps per level and 14 con ( with a 10 base con and + 4 bonus from a spell ), you should have 80 hit points ( 8 + 2 per level ). The issue is with the item you get 88 hit points out of 80 when you equip a +1 con item which should not raise con at all. Casting the spell, well we can control that, but long after the spell is cast when you re-login you are getting a bonus from the item about your real max. The only way to correct this via script is to damage you back to your proper level of 80 hit points, this is just undoing it, but it's a complicated issue and folks think they are being hurt instead of fixed.
Note that you get the extra hitpoints regardless of what your con score is, when the rules are they are relative to your con score. ( Another effect creates bonus hit points so we don't even need this as a feature )
This is a bug, an old one, and one of the ones we've not been able to squash yet. Eventually we will, which is why Kaedrins put 100 hours into working on it. Really this needs a solution in NWNx instead which can correct the core issue coming from the code for equipping items.

In the meantime, if that's your only reason to uninstall K's pack, Elanee having a point more or less in will isn't exactly a game-changing difference.
