I started wooing ashley, but found that her personality isnt really my thing.

Is it impossible to go back to liara once you've told her that you just want to be friends?

if its impossible through in-game methods, can you use a save editor? or will that screw up the import?

You can start a new Liara romance in ME3.

You can create a save for ME2 using a save game editor, yes.

I'm not sure if you can go back to Liara after you "broke up" in ME1 or not, but I would think so, since it looks like you can start a new relationship with her in ME3 if you never had one.
