I'm extremely satisfied with the demo. I also am satisfied that Bioware kept the demo as spoiler-free as possible.
It limited conversations a lot, but it's a demo. This was expected.
Visuals
Earth and Shur Kesh(?) looked great, faces look great, but the problem about my custom MShep is that he had dark circles around his eyes.
I know that the galaxy is at stake and everything must be stressful on Shepard, but the dark circles seemed too dark.
Biotic powers look great, but Pull doesn't look as natural as it looked in ME2. Charge looked better though, the faster animation made the game feel more fluid.
Sounds
The voices sounded good, Wrex sounded a little different. And Beattie isn't Mordin I guess? It's hard to tell if Mordin's VA still sounds like Mordin because he was talking through a... radio I guess.
Out of the 4 guns we try, they all sound better and unique.
Even the powers sound great, especially Shockwave.
Gameplay
Gameplay was enjoyable. I was a Vanguard, but I only played on Normal because on higher difficulties, the penalty for power cooldowns was too much since we were forced to use 4 weapons.
AI seemed smarter, besides squadmate AI.
Combat was fluid, and since I played Vanguard, I had to constantly think about what to do next, Charge+Nova is probably one of the best things ever.
The one thing that bugged me was the hit markers. Hopefully an option to turn them of will be in the full game.
My thoughts on the ME3 demo.
