So... everyone wants see Udina dead just because he's mean to you? According to ME2 he actually does a great job of representing humanity if you put him on the council (based on Anderson's dialogue and news reports), and he does a lot for Shepard in ME1.
As for who I'd like to see dead, I'm not really sure, Lord Darius maybe? He probably won't be making a return however.
