I did always find it whack that you couldn't see your face code if you imported your Shepard from ME1.
Now, I can only speak to the Xbox version, but those of you saying you can see your code even though you imported from ME1 may want to double check that code. There is a bug where if you import a ME1 Shep, then go to the customize face option, but then back out of it and accept the imported face, when the game starts it will show you a face code, but it will be for the customized shep you started to make, not the one you imported.
Now, there is actually a way to see your ME1 face code, but it takes some fancy computer maneuvers (especially if you're on the Xbox). You can skip steps 1-4 if you're on PC.
( WARNING: Doing this for the Xbox requires the use of the program Modio to look at the values in your save file. Using Modio to modify your save files is against the Xbox Live Terms of Service and can result in both your Xbox and Gamertag being banned from Xbox Live. Use Modio at your own risk. )
1) Format a USB flash drive in your Xbox.
2) Start up ME2 and create a new game by importing your ME1 Shep.
3) Go through the intro and when you wake up in Lazarus Base, save your game on the flash drive (or move it there later).
3) Back to your PC, pop in the flash drive and download Modio.
4) Using Modio, open up the save game file on the flash drive and export the .xbsav file to your hard drive.

5) Go to the ME2 Save Editor, register, and upload your .xbsav file (.pcsav file if you're on PC).
6) Click on the My Saves Tab, then the Morph Head button, then export the YAML file.
7) Go to the Mass Effect Tools upload page (Female | Male), give your Shepard file a name and upload your YAML file there.
8) Go to the Mass Effect Tools code generation page (Female | Male), enter the name you entered in Step 7 and the site will give you a list of all character creation slider tick settings for the ME2 CC (far left = 1) as well as a face code for ME2/ME3.
IMPORTANT: Note that the extract doesn't give you Complexion, Scars, Eye Color, Nose Shape, Hair Style, Brow Color, or Makeup for various reasons. But you can easily determine those by doing some comparisons with your imported Shep and a fresh one you've created. Nose shape was probably the hardest one. I had to take pics with my phone and compare them.
9) Now, I personally would not take your code straight into ME3, because even if the code is correct, the ME3 face looks dissimilar enough that you might not be sure. At this point what I would do is start a new ME2 game with your ME1 import and at the character creator screen enter the code and tweak from there. The great part about this is you have your imported face there available, so you can compare it with what you have so far with the code.

Using Modio in Step 4
Step 4a) From the main Modio window make sure your USB flash drive is selected and click "Open from a device"

Step 4b) Progress through these next screens by selecting your profile, game, and then career.

Step 4c) From the career screen select the File Contents tab

Step 4d) In this tab, right click the save file you want to extract and click "Extract File". This will let you save the .xbsav file to your computer hard drive

I did this earlier today so I could see how my Shep would look in ME3. (You'll have to forgive the crappy phone pics. My fiancee absconded with the camera).

Now my initial gut reaction was, "OMG that doesn't look like her at all!" But truth be told, the charcater creation (and squad screen) isn't very flattering. Playing the demo with her and seeing her animated she looks a lot better and I can tell that she's my Shep.
The biggest difference is the hairstyle (obviously) but I like that it looks like hair and not plastic. The thing that kinda bothers me though is the hair color. My Shep has hair color code 5 which in ME1 and ME2 is equal parts red and brown. But in ME3 it is nearly completely brown. It is slightly reddish when the sunlight hit it in certain cutscenes. I tried giving her the full on red hair, but that didn't look quite right either. In the end I think I'm ok with this. In the game she looks great. And you know, sometimes people get different hair cuts and dye their hair.
