I just want to play a male Quarian, I don't really care about the class. I'd gladly buy a DLC that would let you play as one.
Races/class combos you'd like to see?

Elcor Vanguard.
With vim and vigor: Charge.
In the multiplayer FAQ on the official website, it is asked if we would get to play as Elcor and Hanar. Their answer was "anything's possible"
I can picture it now...and it is glorious

There really should be male Quarians, They are the only other race in the game besides humans where you see both males and females walking around.

I agree Male Quarians. I would also like to see a female Turian or a female Krogan in general. And I don't mean the overly covered up female Krogan. I want to see what they actually look like almost as much as I want to see the Quarian faces.

Vorcha Vanguard.
I am legitimately curious to see if their body could even hold up to being subjected to a Charge.

I wouldn't get your hopes up for having a geth race. In my opinion, it wouldn't work very well. Legion was one friendly geth. More friendly geth would kinda take away that specialness legion has.

Legion was the one friendly geth we met. Part of the point of his story was that the geth Shepard fought are heretics, and the geth Legion hails from seek peace. Soon enough this war will be theirs, too.

The issue isn't just putting a new species in the class rosters. You also have to design them a power set that fits the class and the species and make sure that their special abilities fit with the class.
Krogan Rage on a Vanguard would be horrifying. The melee and defensive bonuses would be RIDICULOUS and the downside to the Krogan characters (that they're slow and hard to maneuver) would be completely irrelevant when you can just Charge.
You also need to come up with new combos that haven't been done in the other classes. What else do you add for Sentinels? You have Warp/Throw, Warp/Overload and Incinerate/Lift Grenade. Maybe Throw/Cryo? But that leaves you with no direct damage power. What do you add to the Adept? Soldier? Engineer?
Every viable combo that I can see has been done in the three sets for each class. Any other new sets would either be redundant, useless or overpowered.

Male Quarian - PLEASE!
Tech/Adapt Volus
Armor Change for Drell - Thane was cool, but not every Drell should look like him.

Alright I don't have access to the multiplayer yet so I don't have a full listing of the class/race combos available to me but just a few thoughts from what I'm seeing here.
Alright two race/class combos that apparently aren't in that make me go, "Seriously WTF?"
Turian Infiltrator and Krogan Vanguard. I mean seriously BioWare is Garrus not a tech & sniper expert? How is that not Infiltrator? And again Wrex is the single most iconic Krogan in the franchise and he's a "battlemaster" read: a biotic krogan with a prefernace for shotguns. Again how the hell isn't this enough material for Krogan's being vanguards?
Idk it's like not including engineer for quarians or adept for asari, they're classes that are pretty iconic for that race if only because of the squad members.

I think people are confusing context when it comes to Krogan Vanguards. To put it simply Krogan are basically "natural" vanguards. Their bodies make them perfect for front-line warfare. The vanguard class is a "biotic" vanguard that likely requires a certain level of biotic amplitude that I (personally) don't believe Krogan reach.
Basically a Krogan fits the definition of vanguard but not the class of vanguard.
Plus in terms of gameplay it would be ridiculously overpowered.
No, engineering for quarians and biotics for asari are basically built into their entire system of life and warfare. Their entire race specializes in it.
Where as Krogan aren't naturally strong biotics. They have a few, but not many, and even less now that the Genophage keeps them from being able to do experimental procedures to create biotics (which caused huge casualties that were acceptable when they could pump out lots of babies).
