I was thinking for Tech Armor, go with Power Armor.
Heavy for Throw, Warp, Overload, and Cryo Blast.
And Guardian for the Defender class passive.
I'm not sure what would be the best bonus power, though. My playstyle is basically, while I am the type who will take out as many as I can from a distance, will not hesitate to get into mid-to-close range if necessary but prefer distance and basically toying with the enemies with my powers. So I'm thinking just choosing the assault rifle for the bonus ability since going shotty never suits me well.
Anyone have any edits or suggestions for the most entertaining build?

My question when it comes to RP-ing is how would Shepard know or learn s/he is suddenly capable of biotics?
That you are going to be learning as you go, since its only two biotics powers that are cast similarly, and since you begin with a level one throw, you can RP Shep not using it until later on.
Edit: and from the codex descriptions, Shepard should be able to quickly notice something is different. And maybe not use throw until you get to freedom's progress. (like Jacob showing you a few pointers before going on that shuttle).

With your current setup you would only get Cryo to level one.
And what difficulty? Assault Armor can be too good to pass up most of the time on higher difficulties.
Edit2: trying to be more clear with thoughts.

And something to consider is going with Throw Field and Unstable Warp so that you can CC multiple enemies on normal (I mean detonating Warp bombs with Warp). And Raider could be an interesting alternative for the Power Damage boost, but that also depends on how you are importing Paragon Renegade for the difference in there score boosts.
Lastly you could also leave Overload as a one point power, and use Energy Drain to keep up your Power Armor.
Edit: adding note,
Edit2: and I forgot, maybe Energy Drain might not be a good BP, since you'd need to hit shields or synthetics, IIRC.
So Tungsten, Slam, Stasis or Flashbangs are a few that I'd recommend instead.

Build:
assault armor
passive
overload
warp
(the rest doesn't really matter).
bonus power: energy drain/ flashbang
bonus weapon: mattock if you have the FP pack, and if you don't... seriously, get it, it's awesome. or maybe vindicator.
The aim is to operate at mid-close range. you can use powers or weapons to strip defenses. Once you have, flashbang/ assault armor will stagger those enemies and let you pick them off much easier. make use of the deadly elbow of shepard. My preference is to strip defenses with guns, and then use crowd control such as throw, flashbang and assault armor blast to toy with the enemy. I also tend to take the geth pulse shotgun, because that thing is awesome.
Most importantly, take advantage of the sentinels survivability to go crazy. The sentinel is the most versatile class, and probably my favorite. have fun.

Throw Field
Heavy Warp
Assault Armor
Guardian
Area Energy Drain
1 point on Overload (to explode pyros)
That was before LotSB, mind you. If you have that DLC, you can drop Energy Drain and go with max Overload and one point in Stasis.
I went with a shotgun since I used CQC most of the time, but AR is viable too.

I have played around with a few Sentinel builds. Since you plan on playing on Normal difficulty, I recommend one of the following:
4 - Throw Field
1 - Warp
4 - Assault Armor
4 - Heavy Overload
0 - Cryo Blast
4 - Guardian
4 - Neural Shockwave
4 - Throw Field
0 - Warp
4 - Assault Armor
4 - Heavy Overload
4 - Full Cryo Blast
4 - Guardian
1 point left over for Warp or a bonus power. Recommend Stasis (requires Lair of the Shadow Broker DLC)
4 - Throw Field
4 - Unstable Warp
4 - Assault Armor
1 - Overload
0 - Cryo Blast
4 - Guardian
4 - Crippling Slam

OTOH, I'd recommend adopting a mid-range playstyle if you want to play Cryo-Throw. The Cryo power moves too slowly for long-range use and it CC's too slowly for a pure playstyle IMO.
As said, E.Drain isn't useful on Normal b/c shields aren't plentiful enough. I wouldn't suggest Slam if you have Throw Field. Flashbang could be useful as a way to close in on bad guys, even at lvl1. Stasis will absolutely trivialize Normal, so that's something to think about.

I like this setup, but I'd go with Heavy Slam instead. I didn't like the having enemies staying stuck behind cover with Crippling Slam.

Heavy Warp, Power Armor and Raider. either Heavy Overload, or Tungsten Ammo, pick whichever you like, I prefer the ammo, Overload is fine with 3 points. pick up the Mattock later on. get Kasumi and Miranda as teammates, leave Overload alone on the former.
playstyle: **** **** up. oh, and use Throw against Husks.
