I've never done multiplayer on any game but, I admit, ME3's interests me. How important are headsets? For various reasons, I'm not in a position to use one during play. Is it optional or essential?

I don't know, atleast in bronze level you really don't need them as most of the people aren't wearing them either.

Optional. On bronze and silver difficulties, at least.
You'll probably need a team full of people with headsets if you plan to attempt gold because it's bloody difficult and you'll need to communicate with each other and work together.
