Giving a character a look is supposed to be a visual representation of who the character is and what they represent. You and I know who Ash is, but ME3 is supposed to be "a great place to start" What are newcomers supposed to think when they see her? (get yer mind outta the gutter!)
Unique looks are why Aveline in DA2 wore heavy guardsman's armor. that's why Jack is covered in tattoos. That's why Shepard wears N7 armor. It's why Grunt has blue eyes instead of red.
What does Ashley's outfit say besides "I have two X chromosomes?"

Okay, for me, it's like this. Say, Ash is someone I worked with when I was sandblasting for a living. Every time I'd see her, it would be in her work clothes, stuff worn for rough, dirty, hard work. Kinda like the work outfit she put together on board the SR1. I'd get to know some about what she's like from working with her, but her work clothes would only tell me a part of what she's like. We get to be friends, then one day, I see her at the baseball game and she's wearing something she actually likes. Now, this doesn't change what I already know, it ADDS to what I know. Maybe I find out she likes dresses, or bell bottom blue jeans, short shorts, goth - whatever. This adds, not subtracts.
The iconic look fulfills this requirement, and it also gives Ash a distinctive look for the game, much as Han Solo's outfit in Star Wars.
Personally, I think because you don't like the outfit, you're not seeing my point. You want to emphasis her military side. I want to see other sides of Ash. Being sexy and a little soft IS an aspect of every woman I've met, and it's nice to see that side of Ash.

You do realize that Ash's outfit here is a military uniform, right? These are her work clothes, if not her fighting clothes. "The need to look pretty" really isn't a high priority for military uniforms.
If Ash had genuine civilian clothes, I'd be fine with it. A hoodie. A dress, a T-shirt. Fine. That's her preference. But what she's wearing is an Alliance uniform. A unique one designed with one express purpose: to give Ashley Williams sex appeal. Ash's personality had absolutely nothing to do with it at all.
