Mine were on default high (same settings as when the game started/launched) except I changed resolution to 1920x1080. I went into the... settings.exe later and the only thing I could improve was Anistropic Filtering, which was on 2x when this was taken, so not significant, but I changed it to 16x afterwards.
Still constant 60 framerate as ME2. Same PC. Way better.

You're welcome. So if I'm right, we should see high resolution textures (above 1024x1024 for most things) when the game ships. It worked for the first two games, so there's no reason they wouldn't have high resolution textures for this game. Especially since it's based on the Unreal 3.5 engine (also found that out while searching).
I'm pretty sure that ME2 didn't have high resolution textures. The texture quality was practically the same as the console version, which is why there was no texture detail setting.
Textures may appear sharper on the PC though because the display resolution is higher.
ME on the other hand, did have a texture detail setting. Before ME2 came out, I remember a graphics programmer stating that the texture detail would be dynamic in ME2, and would increase or decrease depending on how much memory was available.

Kind of sad really. Then again Flying Wild Hog made a PC exclusive and the game has great graphics and good optimization and the Extended Edition will have further graphic improvements and tweaks while ME3 will remain a ****ty console port.

I gotta say, the game looks great. Sure the body textures are bad, but everything else looks fantastic.
Most of the demo I didn't notice (the actual combat piece) but it was indeed very noticable during beginning dialog scenes.

Who said that? All I know is that a lot of people didn't set any of these options and that can have a visual effect on the game. Thanks, I know the armor/clothing textures are unfixable in the Demo.

People said that when the demo of DA 2 came out, it wasn't representative of the full game. Why should we think different about the ME3 demo and the full game?

By the way if you have anything better than 9800GT the configuration utility will crank everything to max anyway. BioWare did not do any adaptation for the PC version for the demo, I just hope the final game will look properly. Mass Effect 2 did.

I don't need super high res textures but the Sur Kesh background looks like it comes 10 years too late. This 5 years after Crysis in an AAA title is disappointing. And it's not the fault of consoles. Other console games have much better textures and backgrounds. Bioware should have hired optimization experts. Every platform would have profited from that significantly. Instead the budget went into huge amounts of DLC very few people will every see.
