Combat
It felt better, faster and more fluid. It's more dynamic. It will take some time getting used to just like the transition between ME1 and ME2. This time around it actually feels like there would be a difference between a skilled player and a newbie, especially on the higher difficulties. Overall it's satisfying.
Graphics
It's better than ME2, no doubts about it. Larger areas, wide open scenes, better lighting. It doesn't feel as claustrophobic, at least not on these demo levels. Support for anti aliasing made everything look smoother and actually makes a big difference.
Music/sounds
The music is good as it always has been. However it felt like the music was to low, I turned the sound effects down a bit to be able to increase the overall volume to make the music more noticeable. The overall sound is an improvement, much larger scale. Powerful sound effects.
Interface
Keymapping seems to have been improved(?). The hud, menu and subtitles felt good, subtle, clean and not in the way of the visuals. Whereas ME2 could be a bit messy.
Animations
Overall the animations felt good, just as you'd expect. One major thing that still concerns me is the running animations for almost everyone. It feels like people are floating around, moving faster than their actual steps. This is most noticeable while running with your weapon drawn. Sometimes squadmates do awkward turns, moving their legs unnaturally, stuff like that.
Facial animations
Overall this also felt good, it's better at times but overall better than ME2. One scene that's really convincing in the demo, at least to me, is the last scene where Shepard talks to the dying cerberus soldier. In that scene the facial animations felt really convincing. However there's something...I think that it's the mouth and lips that seem to be out of sync with the words sometimes and that lower the overall authenticity of it.
Summary:
Playing this demo feels good, it certainly can't compete with the full experience. Content is cut, probably dialogue as well. That makes it more railroad than it actually is. ME3 can't be judged just by playing a demo, that's just not fair. To me everyting didn't feel perfect it could feel a bit unpolished at times, by now you know some things that's concerning me. When put into perpective I think this will be a large, awesome experience. I'm fairly comfortable to say that the retail game will be awesome.

Basically the demo is an old build. The retail version will feel even better I'm sure.
