I have already played through as an adept in ME1 on normal but want to start a new playthrough but don't want to be an adept or an engineer because I want something new and the engineer always seem so weak. So out of the other classes - soldier, vanguard, infiltrator and sentinel - which would you recommend?

I would personally recommend Vanguard for a mix of biotic CC powers and close quarter shotty action. Infitrators can be quite fun as well, if you are more into picking of targets from long range with snipers. They also come with some useful CC tech abilities, as well as some combat based abilities that can help you survive in those tight spots.
Soldiers are nigh invincible and very deadly with guns, but boring as hell. And I never liked how Sentinels and Engineers played in this game.
Bottom line, go Vanguard, if you wanna have fun.

I've played the Soldier and Sentinel the most. And soldier can be spec'd to eat rockets on insanity. (I'd recommend Shock Trooper).
The Sentinel is fun with it's CC potential, but you'd need at least one tanker character. Wrex and/or Ash work perfectly for this. (For this class it depends, I've liked Medic, but Bastion can also work nicely).
Also the Infiltrator has Immunity too, and with Decryption and Electronics at 9 talent points each you can bring any combo of your squad and even ignore those two on squadmates like Garrus and Liara for example. (Using Commando for Pistols and Sniper Rifles makes the class very effective at any range).
As Relix said the Vanguard can be fun with its blend of talents.

I don't mind Sentinels personally. Since biotics are king, Sentinels give you a good mix of biotic and tech powers that will prove useful in almost any situation.
Infiltrator was fun as well, and vanguard was great for getting up close and personal with the shotgun. Carnaging with Wrex, good times.

Try infiltrator, it's the most different from what you're used to before. You still get tech powers, sure, but they're different ones, and the extreme long range of playing an infiltrator is nothing like being an adept or engineer.
You also will discover that all those annoying little sidequest planets get a hundred times easier when you can pick off all the outside enemies from about a half-mile away...
