The in-game graphics settings for Mass Effect 3 may seem very limited, but it is still possible to configure all the settings just as from Mass Effect 2 with a couple extras. You just have to launch the Configuration Utility. To do so, go to the folder where the demo is installed and further into the folder Mass Effect 3 Demo\\Binaries. Launch "MassEffect3DemoConfig". Under the graphics settings are several shadows, lighting, anisotropic filtering, and post process antialiasing options. I found that most of the settings were automatically maxed out on my PC, except for anisotropic filtering, which I bumped up from 8x to the maximum 16x.
Be aware that the antialiasing setting uses post processing. This means that while it will effectively smooth out jagged edges without much of a performance hit, it could also blur texture detail slightly. If you're fine with that, great, but if you want to avoid texture blurring and still smooth out jagged edges you will have to disable the in-game antialiasing setting and force true multi-sample antialiasing through your graphics card's control panel. This will have a larger performance hit than post process antialiasing but the image quality will be sharper.
