All melee weapons can do a deathblow.
Are warriors the only class that can finish a boss?

Not sure finishers are weapon-specific. My rogue with DW daggers did the same finisher as Oghren with a 2h-maul... Climb an ogre and when it falls, over-the-head-stab the face. Maybe they're monster-specific.

Yes, any class can kill a boss, and every class has some spectacular "finishers"
This being said, a finisher is not NEEDED to kill anything, it just makes it easier and more satisfying.

On the rare occasions that I've been near a mob when it's dying with melee weapon out, my little dwarf has done a finisher.
As said, though, archers don't seem to. I actually switched my difficulty to easy and wandered around taking on yellow/orange mobs with my party in hold position just to see if I could get one. Now, there's a possibility I missed something, but I never saw one with crossbow or bow.

You want your mage do perform a finisher?
Give him a sword and send him into melee combat; I'm very, very certain that the finishing moves are based solely on what sorts of melee (non bow/staff) weapons your party has equipped, and even then only on whether it's Sword and Board, Dual Wield, or Two Handed.
Most often with his shield, which is the frightening part.
