Are we going to have the option in the final game like in 1 and 2 to holster our weapons when not in combat on missions like Sur'Kesh?

Hub areas your weapons will be holstered, combat areas they will be out.
There isn't any in-between in ME3 because of memory issues which has already been explained by devs.

In the multiple threads its been talked to death about.
It has a lot to do with it actually.

A dev said it in the general forum. Storing animations takes memory. They had problems with that, as ladders/rolls/melee animations need that space. So, holstering was cut.
