Just how do heck does simplifiing,stripping and complete trashing tons of gameplay elements(some original, at that) make a for better RPG, that people enjoy MORE.... From MY PERSPECTIVE, all it leaves is a void.

For the record, I think ME2 was the better game. People often say unsupported things like "the story is filler" and "it was just a straight shooter" but neglect to recognize the things that are there.
The story is only filler if all you cared about was the Collector, and by extension, the Reaper threat. ME2 did an amazing job filling in and fleshing out every important factions' background and politics. It did an amazing job setting up a "build alliances" story structure like the one ME3 looks like it will have. It gave us the Quarian indecision about War with the geth, it gave us the Heretics and the Faithful (for lack of a better term) geth, it gave us Tuchanka and the genophage cure, and a whole lot more.
No, the Collector/Reaper menace/threat was not its strongest point. No it didn't seem to progress that story arc very much. But it did progress several other, very important, story arcs.
As for RPG vs TPS, that all depends on what class you played. Virtually anything other than the Soldier is a very RPG experience. Fast paced sure, but when you level up Pull to Pull Field and use it on Husks it's totally and irrefutably different than it's base ability. When you level up singularity and warp you can demolish the battlefield. When you level up Biotic Charge its absolutely devastating.
By comparison if you level the Soldier up all the way all you really get is a generic TPS with some slightly nifty ammo powers and Adrenaline Rush.

Well, i kinda just said why i liked it... It was/ felt like a much richer expirience.. flaws included..
ME2 just feels streamlined. Cant agree with "ME2 is leapes and bounds over ME1" statement....
I will however give the shooting mechanics their due credit.... But its hardly an acomplishment, in this shooter oversaturation.

That said I want to provide a little common ground. People disagree on multiplayer, homosexuality, the shooter mechanics, textures, diolauge, gameplay, customization, soundtrack, hell I could go on. But all that said I think we can agree that out of the ME1, MEG, ME2 and ME3, ME2 is and will be the worst, for several reasons.
To name a few:
1. Story was filler.
2. Character backstories where not connected to the main plot in anyway, Dragon Age 2 did a good job at this.
3. Soundtrack was not as good as the previous game.
4. Combat was improved, but not improved enough. Mass Effect 3 has pervected the combat system, though the clunky and sketch gameplay of Mass Effect 1 will always have a place in my heart.

Curiously you dont mention world-design, customastion or bonus content and replayability.

Honestly, how can you say it is the worst in the series. Story was great, ok i didn't like the whole "joining Cerberus" thing, but i i made do (basically, used Tali and Garrus as they are original Normandy crew). Music is great, combat is improved. The characters are a lot better.
One thing i disliked was the size of the Citidel. How can you restrict what was the central point in ME1 to a few floors, and no way of walking around. I liked that in the 1st game.

ME2 actually has some of my favorite, most engaging characters of any BioWare game. I think it remains to be seen how much ME2 characters' back stories (and plot elements) connect w/ the overall plot arc of the trilogy.
I liked the more hard RPG approach to skill advancement and overall customization of ME1 personally, but combat did turn out more fun and fluid IMO in ME2.
The more old school character building and customization elements and the end game of ME1 wind up the only things I'd give a decisive victory to over ME2.
