It really sucks that the music stops after you press the start button, only to show a bland menu screen with barely any music. They should've just kept the title screen as the menu screen.

It's beautiful I agree, but ME2 had more of a "let's get ready for some action" to it.

ME3 has more sad music in it which I can understand. People are dying and nothing can be done about it. If I were Shepard, spectre, killed saren and stopped sovereign, then destroyed the collector base to return to earth and see her own people being butchered. I'd feel pretty helpless

Different games have different intros to fit the story of the game i guess. ME1 had that spacey sense of wonder and discovery in it's main menu theme which suited the games moments like Ilos where you were learning the fate of an ancient civilization and ME2 had the all out battle to the finish music which suited the suicide mission.
This time it seems like they are going for epic galaxy coming together to fight for survival kinda thing.

Me1 was very Vangelis-influenced in it's music...Especially Blade Runner, even though that's kinda well known. Me2 was more action-y, and quite bass-driven (low end sounds)...Me3 does seem to be more reflective and sad, but I like what I've heard so far. I'm glad they had different styles to the music throughout each game, but I do miss the elevator music versions of Me1's various themes.
