The races/classes you unlock are random, you get them from buying Recruit and Veteran packs. A Veteran pack costs 4x as much but has 3x as much stuff* in it and always contains at least one good item.

As for asked earlier, what advantage Taurians get in place of being able to roll... they get good combat abilities as mentioned, and, which hasn't been mentioned yet- improved health, in fact second only to the krogan.

*The veteran pack still only include five items like the recruit pack, but those items will be in groups of three (IE: 3 medi-gels instead of 1). The Veteran packs are totally worth it.

same amount of stuff you just always get an uncommon unlock with it, in recruit-packs you have a small chance of it only difference

My experience:

Turians are very tough, and have a higher weight limit than the other races. However, they can't roll.
Drell are very squishy, but they're nimble and have a higher accuracy than other races.
