So I've unlocked some pretty sweet rares in the demo. I maxed out my soldiers level, and got him a krogan and the widow sniper.

I'm gonna be ridiculously bummed if my unlocks don't care over. Is there any word on what's gonna happen to our stuff? 

and if it does go away, is the purchasing system different in the retail version, so I can just buy guns and characters, without getting 17 thousand smg upgrades?

I don't think it will go on. You will have to start over, I guess.

I doubt anything from the demo is going to carry over, but I haven't read any confirmation on that anywhere. As for the purchasing system, it will be the same in the retail version as it is in the demo.
