The graphs were produced by Google Docs, while I did some quick calculations to produce some average values for certain of the results. Let's take a look at them, one by one.
The data pool consists of 1345 entires, though that varies, as only the first question was required. (Activity)
1) How would you rate the demo overall?

Average: 76.8%
Interesting. Seems like a quite positive, but not extremelly positive score. It would seem that the community considered the demo satisfactory or decent, but not amazing.
2) What did you think of the gameplay?
Liked it, some things to think about here and there (rolling)
not bad
very good
Good but there are a few bugs
Good, but roll should be mapped to a seperate button.
BEST ****ING GAME EVER MADE HOLY ****!!!!
Excellent.
Sometimes cover didn't want to work but between the roll (which is responsive and fast), the weapons (which were satisfying to use, even that crap pistol!), and the music I thought it was pretty darn fun.I thought it was a MASSIVE improvement on the combat mechanics. The new moves fit each clas perfectly.
Excellent.
Very smooth and fun.
Often rolled when I wanted to exit cover, but oth [...]
This was the question that required an actually written paragraph. Not much to note here, there's nothing really significant.
3) And how would you rate the gameplay?

Average: 82.6%
The community seems to have perceived the gameplay as very good. That should be reassuring, seeing as there were many gloomy predictions about the gameplay of ME3. Those don't seem to have actually materialized.
4) How were the graphics (visual aesthetics)?

Average: 76.6%
The average value is definitely not extremelly high, but it is rather amusing to compare this score with the image the forums seem to be having of the visual aesthetics. No, guys, these are not the kind of graphics you'd expect from a game released in 2006. Get real.
5) How was the music ?
Average: 88.8%
This was the single highest score out of the results. Mansell, Hullick and co. seem to have done a great job. Neat. Champagne for everyone. You are paying.
6) How was the audio?
Average: 85.6%
The audio component of the demo seems to have impressed, with the audio itself achieving the second highest score. Well done, Rob Blake and team. Who would have thought Canadian trash cans would end up inspiring the awesome Reaper sound we keep hearing over and over?
7) Did you select a default Shepard or did you make a custom one?

Sheploo Von Rapeface seems to be the victor so far. It'd be interesting to compare the stats of the demo with the stats of the game concerning this aspect.

8) What did you think of the Character Creator?

Average: 64.8%
I can't quite put my finger into how the CC got such a low score. Sure, it's above average, and it's definitely far from terrible, but I really liked it, personally. It offered what ME2 did, but with slightly more options, and generally better aesthetics.
9) Which class did you play?

The Soldier actually won the Vanguard by only 8 additional votes. Hah!
10) Which was your favorite class?

11) Which system did you play the demo with the most?

Yeah, you, who voted N64? We know who you are and where you live. What you dream of, in the dark, and what you fear in the light. What you- NINTENDO SIXTY FOOOOOOUUUUR
12) Which mode did you play under the most?

RPG Mode is the clear winner here, even though I am sure people did multiple playthroughs.
13) Who did you select as dead?

Let's admit it. We all thought that Kaidan would have died WAY more times.
14) Did you have Multiplayer Early Access?

I am actually surprised that so many people had early access. Hmm.
