Ugh. Same boat. Was lucky to get Asari Adapt in Recruit Pack, but about 20 packs later, nothing but humans. It is VERY disappointing. I'll take ANY other than humans at this point, and I'm beginning to suspect the Salarian Engineer isn't even in the demo.
