Do you keep collecting it or is there a cap? If I completed like 10 Challenges could I have like 20 rounds stocked up?

You don't get them for challenges, you only recieve them through packs.
Furthermore, you can only carry two missiles during a single mission. Your total amount will stack, but you won't be able to use any more than your two missiles. You can see how many you have by going to the "equipment" menu, it is shown at the equivalent of the "up" on the directional pad there.
