i notice the demo runs ultra Smooth with a GTX590, wondering if it runs different with the actuall game, and since i'm Running a Quad SLI configuration, will Suround/Eyefinity be avaliable VIA 3 monitors?
Is the game optimized for SLI/Crossfire and or Surround/Eyefinity??

Eyefinity is supported both on the demo and main game so you will have no problem running it with your current configuration.
