How come we can't get more customization options?

I think we should be able to get more into the customization in the multiplayer like we can in the single player. We should be able to change the armor of our multiplayer characters like helmets, chest, legs, arms, etc. We should also be able to change the facial appearance of our characters like scars, hair, skin color, etc. Then it would be more awsome than before.

...it's a demo. In the full game there will be more types of armor/etc. They're not letting us do everything in the demo.

+1 for being able to chose helmets, the human soldier/vanguard death mask is hideous, not to mention it looks a LOT like the Cerberus trooper helm at a glance, I've shot at quite a few human soldiers who had white armor by mistake. Also if you wanted an intimidating helmet you should've given them the skull masked helmets the mercs in ME2 had I really liked that one honestly.

Humans wear helmets to prevent players from making a Shepard, breaks immersion. The armors are all different for classes to make the classes identifiable.

You can change skin color on aliens.

Except you have roughly a one in five-billion chance of unlocking a single customization option for one of the alien classes.

Disagree, I've completely unlocked my salarian infiltrator.  Its random, everyone has the same roll of the dice.

I've yet to even unlock any extra classes. That said, supposedly unlocking stuff will be 'easier' in the full game.

That pretty much supports my point, except you're the exception.

Color me paranoid, but I get the feeling that the RNG system likes to focus on certain unlocks per person. For example, I usually get shotguns and shotgun upgrades, my cousin usually gets sniper rifles and you seem to get customization unlocks for the Salarian Infiltrator.

That's a valid point, although:
- I suspect the vast majority of people will have "their" Shepard customized, anyways
- it would theoretically be possible to simply lock out the combination that "makes" MShep/Femshep

Facial customization would take some resources, especially when tailoring it to the alien species, but on the long run I think it'd be worth it. Multiplayer may only be an added minor feature for now, but given how much fun everybody seems to have with it, I think this will change quickly. I could even see MP-specific DLCs in the future. Customization plays a huge role in making your character "your own" and preserve a small bit of that classic RPG aspect.
