(devs) Is it possible to patch weapons post-release?

Just to see if the least used guns can get some buffs later on. I'm wondering if the game is coded in a way that allows for weapon patches since more that a few of the weapons were nerfed so badly that they're unrecognizable.

It is possible. There's no way of "special coding" to allow/block devs to patch weapons. Their statistics (damage, reload speed, etc) are all mathematics stored somewhere in game's files.

I just know that some bugs can't be fixed due to needing way too much code.

They can easily be patched by altering the game's files. This wouldn't take much work at all, if you mean changing them in the way of damage or ammo count, or other things like that. Though I'm not sure they have any interest in balance patches, since those are more geared toward competitive multiplayer games.
