Is 120 the cap for the N7 Rating? Currently there are three people above that amount.

Yes it is. 20 is the max level for each character and there are 6 characters so doing geth mathematics, we get 120.

In the main game I think you will be able to promote, and then you start from level 1 again so you could get more N7 ratings, at least this is my understanding of it currently. I could be way off!

But you don't level characters, you level classes.

There is a bug on the demo that resets your progress so if someone has had this happened to them and then leveled all classes to 20 that would put their N7 rating above 120.
