Human Infiltrator - (haven't unlocked any others yet) Tactical Cloak is my friend, sniper the hell out of things, good for going after the activation objectives, sprint to marker, activate cloak and use device, cloak last until almost done and you nail it without taking too much damage if any at all. Keep an eye out for other snipers and the cloaked evil melee Cerberus enemies and cloak and fire, wasting them before they get your team. I do have a sub-machine gun, but most of the groups I run with I'm using my sniper rifle most of the time with the cloak and a few abilities here and there.

Cloak, headshot, profit. Rinse, repeat. Cloak and res teammates when needed and cloak and hack objectives if required.
Simples.

Basically this, also stay with your group until there is a need for you to flank.

I decided to try out a mass effect 2 nightmare kind
of infiltrator set up. No sniper rifle, just a submachine
gun (tempest? whatever the demo upgrade is). I evolved
tactical cloak for fast cooldowns and damage bonus,
plus a fully evolved energy drain. I'm not sure how it
will work for gold, but seems really good for bronze/silver.
Stealth, sneak up on enemy, machine gun, then recloak.
I do miss the sniper rifle sometimes, but you really need
fast cooldowns to attack/kill/recloak before other enemies
can get to you.

I've been running the human with just a widow and full cloak/alliance training damage upgrades. You can one-shot a lot of ****. Not as powerful as my max level vanguard, but it's fun

Go in with a pistol only.
Stand ahead of the heavy DPS hitters and cryo spam the battle field.
Once wave has been thinned a little.
run into the mix.
Freeze - pistol - light melee
If you are about to die - cloak
Revive teammates with cloak
Capture points with cloak
For atlas - Cloak - get behind it - sticky nade - when it turns around just cloak again
for nemesis - cloak - approach - heavy melee (they always run away!)
make sure you can cast a power while still cloaked
oh as a general tip - if you are going to kill someone with a heavy melee - hit them with a light one first to "knock them off balance" that way they wont hit you with their melee

I am currently level 73 and my favorite race/class combo is the Salarian Infiltrator. They come with Energy Drain, Tactical Cloak and Proximity Mine which work great for just about every enemy encounter.
My strategy like many others is to use the Tactical Cloak for escape and evasion, and for getting into great positions for a solid headshot on phantoms and other elite enemies. Spam Energy Drain any chance you get to stun and break any barrier/shields they have and then go for a clean body/head shot. The Proximity Mine I only use for the Atlus, I continually spam it and then fire off sniper shots while it is on cooldown and you can take it down very fast.
Always use the cloak for tagging objectives and rezzing fallen squadmates, for most enemies they have hard time focusing on you and its very easy to rez and then flee if needed.
This class is very good against the phantoms, the energy drain ability is very effective in taking down the barrier they have, and once its down take a headshot to send them to the grave.

Headshots
is that on console? that is a very very ordinary clip of headshots and Ive seen you post that video in multiple threads. with a Widow rifle you can shot through cover and kill multiple enemies at once if you time the shot right. the only thing that makes sniping hard if the frking blinking from spot to spot otherwise its VERY easy. much easier than BF3 where theres factors such as bullet drop/speed and you need to spot the enemy (who ran jump, duck and go prone too).

There's another thread for this, but... eh. I'll post again lol.
I actually took a different route with my Infiltrator. Upgraded her Cloak first thing and switched from a sniper to a shotgun. I'm a flanking machine. And my cooldown is so quick (and I can use one power before my cloak disappears) that I pretty much go around doing this:
Cloak -> Flank -> Cryo -> Shotgun -> Melee -> Cloak
It works great on Bronze/Silver, though I've yet to give my Infiltrator a go on Gold. I wouldn't really be able to move around the same way on that difficulty.

The Salarian Infiltrator is boss. If you max out cloak and gain the ability to use powers while cloaked, he becomes unstoppable when using a shotgun. You can constantly go in and out of cloak and even recharge your shields while cloaked via energy drain. And then there's the proximity mines! So useful for getting behind enemy lines, causing mayhem and still being invisible. I really enjoyed the marksman game at first with the infiltrator, but playing saboteur with a shotgun and mines is awesome.

CQC infiltrator all day!!!
I pretty much play my infiltrator as a poor man's vanguard. Cloak+storm towards enemy+cryo blast(if needed)+shotgun. Salarian's energy drain works the same as cryo blast because it has a stun effect.
I also carry the phalanx with the scope for long range and pin point shooting against guardian shields.

Salarian infiltrator is the single best character in the demo in my opinion.
