WARNING: You might get banned from Origin for modding your game. There are going to be people who mod the game to cheat or unlock DLC they haven't paid for, and EA won't like that. They might go on a little ban-rampage. Just giving you a fair warning.
This mod will put sprinting on it's own key. Press shift to sprint, press the space bar for everything else. You still take cover while sprinting, but pressing the sprint key won't suck you into cover.You also take cover when you press space, which still works the way it used to.
I also tightened up the controls a bit. The space bar used to do different things depending on if you tapped it or held it. Now that it doesn't have so many functions, there is no need for these weird timing issues. You sprint as soon as you hit shift, and you dive-roll as soon as you hit space.
Finally, I added some keys to change the FOV. The /, *, and - keys on the numpad switch between a few different FOV settings (70, 80, and 90 degrees). I don't recommend doing this, though. When you change the FOV, the zoom-in when you aim is broken. There are also issues like the camera clipping through the floor if you crouch behind cover and look up. You need to restart the game to get the FOV working properly again.

1. Find your Mass Effect 3 demo files. This is the default location:

2. MAKE A BACKUP OF THE ORIGINAL COALESCED.BIN.
3. NO, SERIOUSLY, MAKE A BACKUP OF THE ORIGINAL COALESCED.BIN. Drop the modified coalesced.bin file in it's place.
4. Load up the game and go to the key bindings menu. Click on 'reset to default'. The entry for Use/Cover/Storm should turn blank. I put the command menu on the control button, and walking on alt. You can change these if you want.
