I wondered about that myself, then someone told me that Prothy has a line on that as well. Apparently, they represent another race called Iusannon (?) or something, quite probably the previous species that had dominated the galaxy and perished in the last extinction cycle.

We've all been on that level
For one, it doesn't make sense. The Protheans were caught with their pants down by the Reaper, so the statues couldn't have been made prior to the invasion. And after the invasion the facility on Ilos was locked down until the Reapers left.
For another, why would the Protheans even WANT to make statues of Husks?

Those statues were supposed to represent the Protheans - indeed that's how MassWiki still has them in the Prothen article - but it was retconned (delicately so) by Bioware. Not to leave us in the dark, they make Prothy explain. So all good.
